Ingredients for - Lentil & red pepper salad

1. 400g can lentil , rinsed and drained -
2. 5 roasted red peppers from a jar, chopped -
3. handful radishes , sliced -
4. handful olives -
5. 2 tbsp balsamic vinegar -
6. 4 tbsp olive oil -
7. 2 Little Gem lettuces -
8. 150-200g feta cheese , crumbled -

How to cook deliciously - Lentil & red pepper salad

1. Stage

Tip the lentils and peppers into a bowl with the radishes, olives, vinegar and oil, and mix well. Season to taste.

2. Stage

Separate the lettuce leaves and put onto a large plate. Spoon over the lentil salad and scatter with the feta.
