1. 1kg King Edward or Maris Piper potato , peeled and cubed -
2. 5 garlic cloves , peeled -
3. 100ml skimmed milk -
4. 2 tbsp extra virgin olive oil -
5. small pack basil , chopped, reserving a few leaves to serve -

How to cook deliciously - Garlic, basil & olive oil mash

1. Stage

Boil the potatoes and garlic in salted water until tender. Drain, return to the pan and steam dry for 1 min, then mash with the milk, oil and basil. Season and serve, scattered with a few basil leaves.
