Ingredients for - Arugula with Berries and Feta

1. 1/4 c. sliced almonds -
2. 2 tbsp. rice wine vinegar -
3. 2 tsp. honey mustard -
4. 1 tsp. ground coriander -
5. 1 tsp. honey -
6. Salt and freshly ground pepper -
7. 5 tbsp. vegetable oil -
8. 1 package baby arugula -
9. 4 oz. feta cheese -
10. 1 c. blueberries (a scant half-pint) -

How to cook deliciously - Arugula with Berries and Feta

1. Stage

Preheat oven to 350 degrees. Spread almonds on a baking sheet; bake until golden, 5 to 7 minutes, stirring once. Immediately transfer to a plate to cool.

2. Stage

In a bowl, whisk together vinegar, mustard, coriander, honey, and salt and pepper to taste. Slowly whisk in oil.

3. Stage

Arrange arugula on each of 4 plates. Top each with an ounce of cheese, 1/3 cup berries, and 1 tablespoon almonds. Drizzle with dressing and serve.
