1. 1 c. cranberry juice -
2. 1/4 c. grape seed oil -
3. 1 c. maple syrup -
4. 1 tsp. vanilla extract -
5. 1/4 c. golden flaxseeds -
6. 1/2 c. wheat germ -
7. 1/2 c. shredded coconut -
8. 4 c. rolled oats -
9. 1 c. green pumpkin seeds -
10. 2 c. dried cranberries -

How to cook deliciously - Cranberry Pumpkinseed Granola

1. Stage

Preheat oven to 250 degrees F. In a small pan, bring cranberry juice to a simmer, and cook until liquid is reduced to about 1/4 cup. Add oil and maple syrup; warm through. Remove from heat and add vanilla.

2. Stage

In a large bowl, combine flaxseeds, wheat germ, coconut, oats, and pumpkin seeds. Add warmed maple syrup mixture and toss to coat dry ingredients. Spread evenly on a sheet pan, and bake about 90 minutes, until golden brown, stirring occasionally.

3. Stage

When granola is toasted, transfer to a large bowl and fold in cranberries. Cool and store in an airtight container.
