Ingredients for - Zingy grapefruit, prawn, avocado & tamarind salad

1. 3 tbsp sesame oil
2. 1 tsp tamarind
3. 1 small garlic clove, crushed
4. 3cm piece of ginger, peeled and finely grated
5. 3 tsp fish sauce
6. 1-2 limes, juiced
7. 2 ripe avocados, stoned, peeled and thinly sliced
8. 2 red grapefruits, peeled, pith removed, sliced into rounds
9. 8 radishes, thinly sliced
10. 150g cooked king prawns, peeled
11. 2 tbsp sesame seeds
12. ½ small bunch of coriander, leaves picked and torn

How to cook deliciously - Zingy grapefruit, prawn, avocado & tamarind salad

1 . Stage

Combine the sesame oil, tamarind, garlic, ginger, fish sauce and lime juice. Taste and add more fish sauce if needed, then season to taste.

2 . Stage

Arrange the avocado, grapefruit rounds, radishes and prawns on a serving platter. Drizzle over the dressing and scatter with the sesame seeds and coriander.
