1. 2 egg yolks -
2. 3-4 garlic cloves, grated -
3. 1 tbsp. freshly squeezed lemon juice -
4. 1 1/2 tsp. kosher salt -
5. 2/3 c. high quality neutral oil, such as grapeseed or canola -

How to cook deliciously - Classic Garlic Aioli

1. Stage

In a medium bowl, whisk together egg yolks, garlic, lemon juice, and salt until yolks have become paler in color and the garlic is completely incorporated. 

2. Stage

Slowly start adding in oil, first a few drops and then in a slow stream, as you vigorously whisk. Whisk until you’ve reached your desired consistency. 

3. Stage

Store in the refrigerator, in an airtight container, for 1 to 2 weeks.
