1. 1 large head butter lettuce (about 9-inch wide at crown) -
2. 1/2 cup lightly packed flat-leaf parsley leaves, roughly chopped -
3. 1/4 bunch of chives (about 35 thin chives), cut crosswise into 1/2-inch-long pieces -
4. 8 large mint leaves, very thinly sliced -
5. 1 1/2 tablespoons olive oil -
6. 2 teaspoons red wine vinegar -
7. 1 teaspoon Dijon mustard -
8. 1 teaspoon water -
9. 1/4 teaspoon kosher salt -
10. 1/8 teaspoon freshly ground black pepper -

1. Stage

Tear the lettuce: Tear the lettuce into large pieces, about 2 to 3 inches long (you’ll have about 4 to 5 cups, lightly packed.)

Put the lettuce and herbs in a large salad bowl; set aside.

Make the salad dressing: In a jar with a tight lid, combine the olive oil, vinegar, mustard, water, salt, and pepper. Close the jar firmly, and shake the dressing until it is thoroughly combined, about 10 seconds.

Dress the salad: Dress the salad with about 2/3 of the dressing, and gently toss the salad. Taste a piece of lettuce and add more dressing if needed.
