1. 28 oz. canned tomatoes -
2. 1 jalapeno or red chili -
3. 1 tsp. chopped garlic -
4. 2 tbsp. chopped gingerroot -
5. 2 tbsp. fish sauce -
6. 3/4 c. brown sugar -
7. 3/4 c. red wine vinegar -

How to cook deliciously - Lucy Waverman's Homemade Ketchup

1. Stage

Puree half the tomatoes and all the juices with the jalapeno, garlic and ginger in a food processor. Dice remaining tomatoes.

2. Stage

Combine tomato puree, fish sauce, sugar and vinegar in a deep pot and slowly bring to a boil over medium-high heat, stirring continuously. When mixture comes to a boil, reduce heat to simmer and add diced tomatoes.

3. Stage

Simmer gently for 30 to 40 minutes, or until mixture is dark red and jam-like. Pour into a bowl, cool and refrigerate.
