1. 175g mangetout -
2. 175g beansprouts -
3. 1 papaya , peeled, deseeded and cut into cubes -
4. juice 1 lime -
5. 25g unsalted peanuts -
6. small handful basil leaves , torn -
7. small handful mint leaves , chopped -

How to cook deliciously - Papaya, beansprout & mangetout salad

1. Stage

Heat a large frying pan over a high heat. Add the mangetout, beansprouts and 1 tbsp water, and cook for 2-3 mins. Remove from the heat and toss in the papaya and lime juice. Serve scattered with the peanuts and herbs.
