1. 1/4 c. corn oil plus more for greasing -
2. 1 c. whole-wheat flour -
3. 1/2 c. unbleached all-purpose flour -
4. 1/4 c. soy flour -
5. 1/4 c. sesame seeds -
6. 1 tsp. salt -
7. c. cold water or more if needed -

How to cook deliciously - Sesame Seed Crackers

1. Stage

Preheat the oven to 350 degrees. Lightly oil a large rimless baking sheet. Place the flours, sesame seeds, and salt into a large bowl and mix well. Make a well in the center and pour the oil and water into the well. Stir with a fork until blended, adding more water if necessary to make a smooth but not sticky dough that forms a firm ball.

2. Stage

Place the dough in the center of the baking sheet and roll out to an 1/8-inch rectangle. Score the dough into 1 1/2- to 2-inch squares with a knife, but do not cut completely through the dough. (The lines will allow the dough to break cleanly into squares after baking but the crackers would brown too much if they cook as separate pieces.) Bake until crisp and golden, about 20 minutes.
