1. 1 can Mexicorn -
2. 1 c. cherry tomatoes -
3. 1/2 c. black beans -
4. 1/2 c. shredded carrots -
5. 1/2 c. green chile salsa -
6. 1/4 c. diced red onion -
7. 2 tbsp. chopped fresh cilantro -
8. 1 tbsp. jalapeño-and-lime-flavored olive oil or any favorite flavored or plain olive oil -
9. 2 1-inch thick salmon steaks -
10. 1/4 tsp. salt and pepper -
11. 8 taco shells -
12. shredded Romaine or iceberg lettuce -

How to cook deliciously - Fresh-Salmon Tacos

1. Stage

Santa Fe Salsa: In a medium bowl, combine all ingredients; set aside.

2. Stage

Salmon: Heat a large nonstick skillet over medium-high heat. Brush oil over salmon steaks; sprinkle with salt and pepper.

3. Stage

Cook salmon in skillet, 3 to 4 minutes per side for medium-rare. Remove from heat; let cool slightly, then break up into chunks.

4. Stage

Spoon salmon into taco shells, dividing evenly; top with Santa Fe Salsa. Garnish with lettuce.
