1. c. red wine or cider vinegar
2. 2 tbsp. olive oil
3. 1 tbsp. sugar
4. 1/2 tsp. salt
5. 1/4 tsp. Freshly ground black pepper
6. 3 large ripe tomatoes
7. 1/2 medium white onion
8. 2 tbsp. chopped fresh cilantro
9. 1 small jalapeño chili

1 . Stage

In a medium bowl, whisk vinegar, oil, 2 tablespoon water, sugar, salt, and pepper until blended. Add remaining ingredients and toss until well combined. Cover and refrigerate at least 2 hours, or up to 24 hours, before serving. Serve chilled.
