1. 2 c. (240 g.) all-purpose flour -
2. 3 tbsp. granulated sugar -
3. 2 tsp. baking powder -
4. 1 tsp. kosher salt -
5. 4 large eggs -
6. 1 c. goat cheese, softened -
7. 3/4 c. whole milk -
8. 1 tsp. finely grated lemon zest -
9. Unsalted butter, for skillet -

How to cook deliciously - Goat Cheese Pancakes

1. Stage

Into a medium bowl, sift flour, granulated sugar, baking powder, and salt. In a large bowl, mix eggs, goat cheese, milk, and lemon zest.

2. Stage

Add the dry ingredients to egg mixture and fold until just combined; do not overmix (some lumps are okay).

3. Stage

In a cast-iron skillet over medium heat, melt some butter to coat bottom of skillet. Ladle in about 1 cup batter. Cook until small bubbles form on the surface, 2 to 3 minutes. Flip and continue to cook until golden brown, about 2 minutes more.
