1. 17 oz. fresh organic English peas -
2. 1 oz. fresh mint leaves -
3. 25 oz. mineral water -
4. 1 tsp. salt -
5. 4 oz. simple syrup (equal parts sugar and water) -

How to cook deliciously - Pea Sorbet

1. Stage

In a pot of boiling water, blanch peas and mint, then shock in Ice. Strain the mixture, then purée with mineral water, salt, and simple syrup. Freeze according to your ice-cream machine instructions.
