Ingredients for - Roasted Turnips

1. 1 1/2 lb. purple top turnips (see intro) -
2. 1 1/2 tbsp. extra-virgin olive oil or melted ghee -
3. Kosher salt  -
4. Freshly ground black pepper -
5. 1/4 c. chopped fresh herbs, such as parsley (optional) -
6. Zest of 1 lemon (optional) -

How to cook deliciously - Roasted Turnips

1. Stage

Preheat oven to 425°. Transfer turnips to a baking sheet, drizzle with olive oil and toss to coat. Season with salt and pepper.

2. Stage

Roast, turning pan and tossing turnips halfway through, until they are golden in spots and tender, about 40 minutes,.

3. Stage

Optional: toss with chopped herbs and lemon zest before serving.
