2. Kosher salt and freshly ground black pepper
3. 2 tbsp. Extra virgin olive oil
4. 3 c. chopped yellow onion (about 3 small onions)
5. 1 tbsp. minced garlic (about 3 cloves)
6. 16 oz. Guinness draught beer (1 ½ standard bottles)
7. 16 oz. sweet or spicy barbecue sauce
8. 1 medium head cauliflower, core removed and chopped into small florets
9. 1/2 c. old-fashioned grits, such as Quaker
10. 2/3 c. grated extra-sharp white cheddar cheese
11. 1 tbsp. unsalted butter
12. 1 c. whole milk, plus extra for finishing
13. Fresh chives, for serving
