1. 2 lb. boneless beef short ribs, trimmed of excess fat and cut into 2½-inch pieces -
2. Kosher salt and freshly ground black pepper -
3. 2 tbsp. Extra virgin olive oil -
4. 3 c. chopped yellow onion (about 3 small onions) -
5. 1 tbsp. minced garlic (about 3 cloves) -
6. 16 oz. Guinness draught beer (1 ½ standard bottles) -
7. 16 oz. sweet or spicy barbecue sauce -
8. 1 medium head cauliflower, core removed and chopped into small florets -
9. 1/2 c. old-fashioned grits, such as Quaker -
10. 2/3 c. grated extra-sharp white cheddar cheese -
11. 1 tbsp. unsalted butter -
12. 1 c. whole milk, plus extra for finishing -
13. Fresh chives, for serving -

1. Stage

Add onions to pan drippings and cook over medium heat for 8 to 10 minutes, until onions are translucent. Add garlic and cook for 1 more minute, until fragrant (careful not to burn the garlic!)
