1. 1/2 c. all-purpose flour
2. 1 tbsp. unsweetened Dutch-process cocoa powder
3. 3/4 tsp. baking powder
4. tsp. ground cinnamon
5. 1/4 tsp. salt
6. 1 tbsp. unsalted butter
7. c. sugar
8. 1/4 tsp. pure vanilla extract
9. 1/4 c. whole milk
10. 1 oz. white chocolate
11. 2 1/2 tbsp. granulated sugar
12. 2 1/2 tbsp. packed light-brown sugar
13. 1/4 c. unsweetened Dutch-process cocoa powder
14. 3/4 c. boiling water
15. Vanilla ice cream

1 . Stage

Make the batter: Preheat oven to 350 degrees F, with rack in center. Sift together flour, cocoa powder, baking powder, cinnamon, and salt into a medium bowl; set aside.

Stir together butter, sugar, and vanilla in another medium bowl. Stir in flour mixture and milk, then the chocolate.

3 . Stage

Make the topping: Stir sugars in a small bowl, smoothing any lumps. Sift in cocoa powder; stir to combine.

4 . Stage

Place 3 ramekins (each 3 1/2 inches in diameter and 1 1/2 inches deep) on a baking sheet. Pour in batter. Sprinkle with topping. Pour 1/4 cup boiling water into each.
