1. Stage
Preheat oven to 375°. In a small bowl, mix together butter, sugar, and cinnamon.
2. Stage
Hollow out apples with a melon baller, being careful not to pierce through the bottom. Brush inside of apples with cinnamon butter.
3. Stage
Place apples into a small baking dish. Bake until apples are tender but still holding shape, about 15 minutes. Let cool slightly.
4. Stage
Fill apple cups with ice cream then drizzle with caramel and top with pecans.
