1. 2 c. small pineapple chunks, plus two wedges and two pineapple leaves, optional, for garnish -
2. 1/3 c. sugar -
3. 1  (1-inch) piece fresh ginger, sliced into very thin coins -
4. 3/4 c. unsweetened coconut milk -
5. 1/2 c. guava juice -
6. 2 tbsp. passion fruit juice -
7. 1 to 2 tbsp. pomegranate or tart cherry juice -
8. Ice -

How to cook deliciously - Copycat Starbucks Iced Guava Passion Fruit Drink

1. Stage

In a small saucepan, over medium heat combine pineapple, ½ cup water, sugar, and ginger. Bring to a boil. Reduce to a simmer and let simmer 10 minutes. Remove from heat and let cool. Strain through a fine mesh sieve into a measuring cup or bowl, pressing on solids to release any extra juices; discard solids. 

2. Stage

In a cocktail shaker filled with ice, combine 2 tablespoons of pineapple-ginger syrup, coconut milk, guava juice, passionfruit juice, and 1 tablespoon pomegranate juice. Add more pomegranate juice, if desired for a darker color. Shake vigorously until well chilled. 

3. Stage

Pour into two glasses filled with ice. Garnish with a pineapple wedge and leaf.
