1. 20 Reduced Fat Nilla Wafers® -
2. 1/2 c. flour -
3. 1/4 c. packed brown sugar -
4. 1/4 c. cold margarine -
5. 1 package Philadelphia® Neufchâtel Cheese -
6. 1 c. granulated sugar -
7. 2 eggs -
8. 2 tbsp. flour -
9. 3 tbsp. lemon zest -
10. 1/4 c. fresh lemon juice -
11. 1/4 tsp. Calmut® Baking Powder -
12. 2 tsp. powdered sugar -

How to cook deliciously - Creamy Lemon Squares

1. Stage

Heat oven to 350 degrees F.

2. Stage

Line 8-inch square pan with foil, with ends of foil extending over sides. Mix wafer crumbs, 1/2 cup flour, and brown sugar in medium bowl. Cut in margarine with pastry blender or 2 knives until mixture resembles coarse crumbs; press onto bottom of prepared pan. Bake 15 minutes.

Meanwhile, beat Neufchâtel and granulated sugar with mixer until well blended. Add eggs and 2 tablespoons flour; mix well. Blend in 1 tablespoon lemon zest, lemon juice, and baking powder; pour over crust.

4. Stage

Bake 25 to 28 minutes or until center is set. Cool completely. Refrigerate 2 hours. Sprinkle with powdered sugar and remaining lemon zest just before serving.Each serving provides: 1g trans fat, 6%DV vitamin A, 2%DV vitamin C, 2%DV calcium, and 4%DV iron.
