Preheat oven to 325°. In a large mixing bowl, cream butter and sugar until it’s light and fluffy, 4 to 5 minutes. Add Greek yogurt, eggs and vanilla, beating on low until combined. Stir in flour, baking powder and salt.

Fold in diced peaches. Pour into a greased loaf pan and bake until a toothpick inserted into the center comes out with just a few crumbs, 68 to 70 minutes.
