Ingredients for - Salt & Vinegar Onion Rings

1. 2 large white onions, peeled  -
2. 3/4 c. buttermilk -
3. 1/2 c. pilsner beer -
4. 2 tbsp. malt vinegar, plus more for serving  -
5. 1 large egg -
6. 1 1/4 c. unbleached all-purpose flour  -
7. 1/2 tsp. sweet paprika -
8. Pinch cayenne pepper -
9. Kosher salt -
10. Vegetable oil, for frying -
11. Flaky sea salt  -

How to cook deliciously - Salt & Vinegar Onion Rings

1. Stage

Cut onions crosswise into ½-inch thick rings, separate rings. 

2. Stage

In a medium bowl, whisk buttermilk, beer, vinegar, and egg. Stir in flour, paprika, and cayenne and season with salt. 

3. Stage

Heat ½-inch oil in a large cast iron skillet until hot. Dip one onion ring into batter and then carefully place in hot oil. Cook, turning halfway through, until golden, about 5 minutes. Repeating with remaining rings, cooking multiple at a time, but not overfilling skillet. Remove as done with a kitchen spider or slotted spoon to a wire rack or paper towel lined plate and season with flaky salt salt immediately. 

4. Stage

Sprinkle onion rings with more vinegar and serve with malt vinegar.
