Ingredients for - Broccoli-Cheddar Macaroni Soup

1. Extra-virgin olive oil
2. 1 garlic clove, minced
3. 1/2 c. Chopped red onion
4. 1/4 c. dry white wine
5. 32 oz. low-sodium chicken broth
6. 1 c. small macaroni
7. Kosher salt
8. Freshly ground black pepper
9. 2 c. small broccoli florets
10. 1 1/2 c. Grated Cheddar
11. 1/4 c. chopped parsley, plus more for garnish

How to cook deliciously - Broccoli-Cheddar Macaroni Soup

1 . Stage

In a large pot over medium heat, warm 1 tablespoon olive oil and sauté garlic for 3 minutes. Add onions and wine; simmer for 5 minutes. Add broth, macaroni and season with 1 teaspoon salt and 1/2 teaspoon black pepper; cook according to al dente package directions.

2 . Stage

Just before serving add broccoli, Cheddar, and parsley; cook until broccoli is bright green and tender and cheese is melted, about 1 minute.

3 . Stage

Garnish with parsley and serve immediately.
