1. 3/4 c. kosher salt
2. 1 1/2 tsp. black peppercorns
3. 4 clove garlic
4. 5 lb. chicken wings
5. 2 tsp. dried rosemary
6. 2 tsp. ground white pepper
7. 2 tsp. paprika
8. 2 tsp. kosher salt
9. 2 tsp. granulated garlic
10. 1 tsp. dried oregano
11. 2 tsp. dried basil
12. 1/2 c. Fresh basil
13. 1/2 c. fresh parsley
14. 1/2 tsp. red pepper flakes
15. 1 tbsp. chopped garlic
16. 1/2 tsp. capers
17. 1 tsp. anchovy paste
18. 2 chopped roasted red peppers
19. 1 tbsp. chopped onion
20. 2 tbsp. fresh lemon juice
21. Kosher salt
22. c. extra-virgin olive oil

How to cook deliciously - Guy Fieri's Brick in the Wall Wings with Salsa Verde

1 . Stage

Prepare the brine: In a large soup pot, bring 8 cups water to a boil. Add the kosher salt, peppercorns, and garlic; remove from heat. Let cool 30 minutes, then transfer to a large pot or ice chest lined with a large garbage bag. Add another 8 cups water, then add the wings and twist the bag closed. Refrigerate 4 hours.

2 . Stage

Mix all the rub ingredients in a large resealable plastic bag. Drain the wings. Rinse under cool water, pat very dry, and put in the bag with the rub. Mix to coat evenly. Seal the bag and refrigerate until ready to cook. (You can do this a day ahead.)

Preheat the broiler. Remove the wings from the bag and place in a single layer on a lightly oiled foil-lined pan. Broil for 8 minutes, then turn and cook for an additional 5 to 8 minutes, or until crisp and golden.

4 . Stage

Meanwhile, combine all the ingredients for the salsa, except the olive oil, in a food processor, using salt to taste. Slowly add the oil and puree until smooth. Serve the wings with the salsa.
