Ingredients for - Avocado Gazpacho

1. Tomato-vegetable juice cocktail (such as V8®) - 2 ½ cups
2. Vegetable broth - 2 ½ cups
3. Tomatoes, diced - 3 large
4. Avocados - peeled, pitted, and cut into bite-sized pieces - 3 large
5. Diced cucumber - 1 cup
6. Chopped tomatoes with juice - 1 (8 ounce) can
7. Chopped green bell pepper - ½ cup
8. Chopped red bell pepper - ½ cup
9. Extra-virgin olive oil - ¼ cup
10. Green onions, thinly sliced - 3
11. Lemon, juiced, or more to taste - 1
12. Minced fresh cilantro - 2 tablespoons
13. White wine vinegar - 2 tablespoons
14. Hot pepper sauce (such as Tabasco®), or to taste - 1 dash
15. Salt and ground black pepper to taste - 1 dash

How to cook deliciously - Avocado Gazpacho

1. Stage

Mix tomato-vegetable juice, vegetable broth, tomatoes, avocados, cucumber, canned tomatoes with juice, green bell pepper, red bell pepper, olive oil, green onions, lemon juice, cilantro, vinegar, hot pepper sauce, salt, and black pepper together in a large bowl. Cover and chill for at least 3 hours before serving to allow flavors to blend.
