1. Leftover mashed potatoes - 2 cups
2. Eggs - 2 large
3. Chicken broth - 2 tablespoons
4. Olive oil, divided - 3 tablespoons
5. Grated raw potatoes - 1 cup
6. Grated onion - 1 cup
7. Matzo meal - ¼ cup
8. Salt and ground black pepper to taste - ¼ cup

How to cook deliciously - Mashed Potato Kugel

1. Stage

Preheat the oven to 350 degrees F (175 degrees C).

Place leftover mashed potatoes in a bowl.

Mix eggs, broth, and 2 tablespoons olive oil together until combined. Add to the mashed potatoes and mix to combine. Add grated potatoes and onion; mix thoroughly. Stir in matzo meal, salt, and pepper. Pour into a 9x13-inch baking pan and drizzle remaining 1 tablespoon olive oil over top.
