1. Vegetable broth - 2 (14.5 ounce) cans
2. Dry lentils, rinsed - 1 cup
3. Stewed tomatoes, undrained - 2 (14.5 ounce) cans
4. Sweet potato (garnet yam), cut into small cubes - 1 small
5. Chopped onion - ½ cup
6. Garlic, minced, or more to taste - 6 cloves
7. Bay leaves - 2
8. Yellow curry powder - 1 teaspoon
9. Cumin seeds - ½ teaspoon
10. Kosher salt - ½ teaspoon
11. Cream - 1 pint

How to cook deliciously - Indian-Inspired Lentil Stew

1. Stage

Combine broth and lentils in a large pot over medium-high heat; bring to a boil.

2. Stage

Stir in stewed tomatoes, sweet potato, onion, garlic, and bay leaves. Return to a boil, then reduce heat and simmer for 35 minutes. Stir in curry powder, cumin seeds, and salt. Simmer until lentils are soft, about 15 minutes.
