Ingredients for - Seafood Gumbo

1. Ground cayenne pepper - ½ teaspoon
2. Ground white pepper - ½ teaspoon
3. Ground black pepper - ½ teaspoon
4. Paprika - 1 ½ teaspoons
5. Dried thyme - ½ teaspoon
6. Dried oregano - ½ teaspoon
7. Bay leaf, crushed - 1
8. Salt - 1 teaspoon
9. Vegetable oil - ¾ cup
10. Chopped celery - 2 cups
11. Chopped onion - 2 cups
12. Chopped green bell pepper - 2 cups
13. Minced garlic - 1 teaspoon
14. File powder - 3 tablespoons
15. Hot pepper sauce - 2 teaspoons
16. Tomato sauce - 1 ½ cups
17. Fish stock - 7 cups
18. Shucked oysters - 2 cups
19. Crabmeat - 1 cup
20. Small shrimp - peeled and deveined, shells reserved for stock - 1 pound

How to cook deliciously - Seafood Gumbo

1. Stage

Combine the red, white, and black peppers, paprika, thyme, oregano, bay leaf, and salt; set aside.

2. Stage

In a heavy pot, 5 quart or larger, heat oil over medium heat, warming the pot first. Add onions, celery, and green pepper. Turn heat to high. Stirring frequently, add garlic, file, hot sauce, and the pepper-herb mixture. Cook for 5 minutes, stirring constantly.

3. Stage

Add tomato sauce, and stir as it reduces over high heat. Add fish stock and bring to a boil. Reduce heat, and simmer for 1 hour, stirring occasionally.

4. Stage

When ready to serve, add shrimp, oysters, and crabmeat. Cover, and wait 5 minutes. Turn off heat, and let stand for 10 minutes. Serve.
