1. Boneless, skinless chicken thighs, trimmed of fat and diced into 1/4-inch cubes - 10 ounces
2. Italian-seasoned bread crumbs - ½ cup
3. Chopped onion - ¼ cup
4. Shredded mozzarella cheese - ¼ cup
5. Egg - 1
6. Mayonnaise - ¼ cup
7. Salt - ½ teaspoon
8. Black pepper - ¼ teaspoon
9. Garlic powder - ¼ teaspoon
10. Vegetable oil - 2 tablespoons

1. Stage

Mix chicken, bread crumbs, onion, mozzarella cheese, egg, mayonnaise, salt, pepper, and garlic powder in a bowl until well combined. Shape mixture into 8 equal-sized patties.
