Ingredients for - Rotisserie Chicken Chili

1. Vegetable oil - 1 tablespoon
2. Diced onion - 1 cup
3. Great Northern beans, divided - 3 (15 ounce) cans
4. Chicken broth - 2 (15 ounce) cans
5. Shredded rotisserie chicken - 3 cups
6. Petite diced tomatoes, drained - 1 (14.5 ounce) can
7. Diced green chiles - 1 (4 ounce) can
8. Garlic, minced - 3 cloves
9. Ground cumin - 2 teaspoons
10. Dried oregano - 2 teaspoons
11. Cayenne pepper - 1 teaspoon
12. Shredded Monterey Jack cheese, or more to taste - 1 cup

How to cook deliciously - Rotisserie Chicken Chili

1. Stage

Heat oil in a skillet over medium-high heat. Saute onion in the hot oil until soft, about 5 minutes. Remove from heat. Add 1 can of beans and smash into the onion using a potato masher.

2. Stage

Transfer onion mixture to the bottom of a slow cooker and add remaining beans, chicken broth, shredded chicken, tomatoes, chiles, garlic, cumin, oregano, and cayenne.

3. Stage

Cover and cook on High until reduced and thickened, about 4 hours. Garnish with Monterey Jack cheese.
