1. Vegetable oil 1 tablespoon
2. Diced onion 1 cup
3. Great Northern beans, divided 3 (15 ounce) cans
4. Chicken broth 2 (15 ounce) cans
5. Shredded rotisserie chicken 3 cups
6. Petite diced tomatoes, drained 1 (14.5 ounce) can
7. Diced green chiles 1 (4 ounce) can
8. Garlic, minced 3 cloves
9. Ground cumin 2 teaspoons
10. Dried oregano 2 teaspoons
11. Cayenne pepper 1 teaspoon
12. Shredded Monterey Jack cheese, or more to taste 1 cup

How to cook deliciously - Rotisserie Chicken Chili

1 . Stage

Heat oil in a skillet over medium-high heat. Saute onion in the hot oil until soft, about 5 minutes. Remove from heat. Add 1 can of beans and smash into the onion using a potato masher.

2 . Stage

Transfer onion mixture to the bottom of a slow cooker and add remaining beans, chicken broth, shredded chicken, tomatoes, chiles, garlic, cumin, oregano, and cayenne.

3 . Stage

Cover and cook on High until reduced and thickened, about 4 hours. Garnish with Monterey Jack cheese.
