1. Stage
In a large bowl, beat cream cheese and sugar together until smooth and fluffy, 2 minutes. Stir in crushed shortbread cookies until completely combined. Using a small cookie scoop, form balls of the mixture. Refrigerate until firm, 30 minutes.

In a small bowl, stir together caramel and toasted coconut. Dip each ball into mixture until completely coated.
3. Stage
Refrigerate 30 minutes more to let caramel set.

Drizzle with melted chocolate.
