1. 12 oz. portabella mushroom caps (about 4 caps) -
2. 3 tbsp. balsamic vinegar -
3. 1 tbsp. soy sauce -
4. 2 piece flat bread -
5. 2 tbsp. lowfat sour cream -
6. 1 c. fresh spinach leaves -
7. 2 tbsp. olive oil -

How to cook deliciously - Ciao, Bella!

1. Stage

Wipe the mushrooms with a paper towel to clean them (they'll just soak up the water if you wash them). Cut the mushrooms into 1⁄4-inch slices and put them in the plastic container. Add the vinegar and soy sauce. Snap on the lid and shake until the mushrooms are coated.

2. Stage

Spread the sour cream on the bread and top with cheese and spinach. Then heat the olive oil in the skillet over a medium-high burner until it shimmers but doesn't smoke. Use the slotted spoon to transfer the mushrooms to the skillet. Save the marinade for later. Sauté the mushrooms until they're almost black and about half the size they used to be, 7 to 10 minutes. Add the mushrooms to the bread.

3. Stage

Pour the remaining marinade into the skillet and scrape the crispy brown bits from the bottom (this is called deglazing the pan). Let the sauce bubble until thickened, 1 or 2 minutes. Pour the sauce over the fillings and turn off the stove. Fold the sandwiches in half. You’re ready to eat.
