1. 1 c. cider vinegar -
2. 1 c. water -
3. 1/2 c. sugar -
4. 1 small red onion -
5. 4 clove garlic -
6. 1 tsp. yellow mustard seeds -
7. 2 bay leaves -
8. 2 whole cloves -
9. 1 1/2 tsp. black peppercorns -
10. 2 tsp. dried thyme -
11. 1 tsp. dried oregano -
12. 2 lb. medium red beets -

How to cook deliciously - Cider Vinegar Pickled Beets

1. Stage

In a saucepan, bring the vinegar mixture, sugar, onion, garlic, mustard seeds, bay leaves, cloves, peppercorns, thyme, and oregano to a boil. In a large pot of boiling salted water, cook the beets until crisp-tender, about 10 minutes.

2. Stage

Drain and transfer to a heatproof bowl. Pour the hot liquid over the beets and let stand at room temperature for 4 hours or refrigerate overnight.

Drain the beets, transfer to a bowl, and serve.
