2. 1 tsp. dried oregano -
3. 1/4 tsp. cayenne pepper -
4. Kosher salt -
5. Freshly ground black pepper -
6. 1 1 1/2"-thick fillet skin-on white fish, such as bass or cod -
7. Lime wedges, for serving -

How to cook deliciously - Perfect Grilled Fish

1. Stage

Heat grill to high. Whisk together chili powder and oregano, cayenne and season with salt and pepper.

2. Stage

Season the fish all over with the spice mixture.

3. Stage

Cook skin-side down, covered, for 8 to 10 minutes, until almost entirely opaque throughout.

4. Stage

Flip and cook 2 to 3 minutes more, until opaque throughout.
