1. 1 cup mashed ripe bananas (2 medium) -
2. 3/4 cup sugar -
3. 2 large eggs -
4. 1/2 cup unsweetened applesauce -
5. 1/4 cup canola oil -
6. 1/4 cup orange juice -
7. 1 teaspoon vanilla extract -
8. 1-1/2 cups gluten-free all-purpose baking flour (without xanthan gum) -
9. 3/4 teaspoon baking soda -
10. 3/4 teaspoon xanthan gum -
11. 1/2 teaspoon salt -
12. 1/2 teaspoon ground cinnamon -
13. 1/3 cup finely chopped walnuts -

How to cook deliciously - Gluten-Free Banana Muffins

1. Stage

Preheat the oven to 350°F. In a large bowl, beat the bananas, sugar, eggs, applesauce, canola oil, orange juice and vanilla until well blended. In a separate large bowl, combine the flour, baking soda, xanthan gum, salt and cinnamon.

Gradually beat the flour mixture into the banana mixture until blended.

Coat the muffin cups with cooking spray or insert paper liners. Fill with batter to about three-fourths full. Sprinkle walnuts across the top. Editor's Tip: Never fill muffin cups all the way to the top. They'll rise as they bake and the batter will spill out rather than make a nice dome.

4. Stage

Bake until a toothpick inserted in the center of a muffin comes out clean, 20 to 25 minutes. Let the muffins cool in the pan for five minutes before removing from the pans to cool completely on wire racks.
