1. Stage
Keep as many of the loose leaves as possible — they make good crunchy bits. Toss the Brussels sprouts with the oil, salt, and pepper and place in a small pan.

Preheat broiler to medium heat.

Place the pan under the broiler and brown the tops of the sprouts, about 5 minutes.
4. Stage
Place the Brussels sprouts in the oven at 375 degrees F until nicely browned on the bottom. Do not stir — let them brown!
