Ingredients for - Fresh Leek and Chik'n-Potato Soup

1. 1 lb. tiny new red potatoes -
2. 1 c. thinly sliced leeks -
3. 2 tbsp. margarine or butter -
4. 2 tbsp. all-purpose flour -
5. 1 can vegetable broth or reduced sodium chicken broth -
6. 1 c. light cream or fat-free light cream -
7. 3/4 c. shredded carrot -
8. 1 1/2 c. Morningstar Farms® Meal Starters™ Chik'n Strips -
9. Chopped fresh parsley (Optional) -
10. Coarse ground black pepper (optional) -

How to cook deliciously - Fresh Leek and Chik'n-Potato Soup

1. Stage

In large saucepan combine potatoes and enough water to cover. Bring to boiling. Gently boil, uncovered, 12 to 15 minutes or until tender. Drain. Use paper towel to wipe out saucepan.

2. Stage

In same saucepan cook leeks in hot margarine or butter 3 to 4 minutes or until tender. Stir in flour. Add broth and cream. Cook and stir over medium heat until boiling. Stir in potatoes and carrots. Return to boiling. Stir in Morningstar Farms® Meal Starters™ Chik'n Strips. Cook and stir 1 to 2 minutes more or until heated through.

3. Stage
