1. 1 lb. zucchini, ends trimmed -
2. 3 tbsp. extra-virgin olive oil -
3. 1/4 c. freshly grated Parmesan -
4. Kosher salt -
5. 1/4 tsp. crushed red pepper flakes -

How to cook deliciously - Hasselback Zucchini

1. Stage

Heat oven to 400°. Slice each zucchini crosswise, like an accordion, making sure not to cut all the way through zucchini.

2. Stage

Drizzle with olive oil and top with Parmesan. Season with salt and crushed red pepper flakes.

Bake until tender and golden, about 25 minutes.
