1. Stage
Whisk the flours, salt, baking soda, and baking powder together. Set aside.

Beat the butter, sugar, molasses, honey, and vanilla on medium-high speed until light and fluffy. Turn to low and add the flour mixture and buttermilk in alternating batches, starting and ending with the flour mixture. Cover and refrigerate 4 hours to overnight.

Preheat the oven to 350 degrees F. Roll the dough out to about an 1/8-inch-thick rectangle. (You might need to divide the dough up to make it more manageable.) Cut into squares and place on cookie sheets.

Poke holes into the top of each square and bake for 15 minutes or until just slightly more golden brown. Cool on wire racks.
