1. Vegetable oil - 1 tablespoon
2. Skinless, boneless chicken breasts, cut into bite-sized pieces - 3
3. Cooking onion, diced - 1
4. Garlic, minced - 3 cloves
5. Chicken broth - 2 cups
6. Black beans, drained - 1 (15 ounce) can
7. Long-grain rice - 1 ½ cups
8. Corn, or to taste - 1 (8 ounce) can
9. Coconut milk - 1 cup
10. Scotch bonnet hot sauce, or to taste - 1 tablespoon
11. Ground thyme - 2 teaspoons
12. Kosher salt - 2 teaspoons
13. Ground black pepper - 2 teaspoons
14. Brown sugar - 2 teaspoons
15. Allspice - 1 teaspoon

How to cook deliciously - Instant Pot Jamaican Rice and Beans

1. Stage

Turn on a multi-functional pressure cooker (such as Instant Pot) and select Saute function. Add oil. Saute chicken, onion, and garlic until fragrant, 1 to 2 minutes; do not brown garlic.

2. Stage

Add broth, black beans, rice, corn, coconut milk, hot sauce, thyme, black pepper, brown sugar, and allspice and stir well. Close and lock the lid. Select high pressure and close vent. Set timer for 15 minutes. Allow about 10 minutes for pressure to build.

3. Stage

Release pressure using the natural-release method according to manufacturer's instructions, 10 to 40 minutes. Unlock and remove the lid.
