1. c. extra-virgin olive oil -
2. 3 tbsp. chopped fresh parsley -
3. 2 tbsp. fresh lemon juice -
4. 1/2 tsp. salt -
5. tsp. Freshly ground black pepper -
6. 2 bunch arugula (stems removed) -
7. 3 small red tomatoes -
8. 3 small yellow tomatoes -
9. 1 small red onion -
10. 3 oz. 3 ounces Maytag blue cheese -

How to cook deliciously - Stacked Tomato Salad

1. Stage

Whisk together olive oil, parsley, lemon juice, salt, and pepper in a small bowl.

2. Stage

Toss arugula with 3 tablespoons olive oil mixture.

3. Stage

Divide arugula evenly among 6 plates. Top with stack of several red and yellow tomato slices and garnish with red onion. Sprinkle with blue cheese.
