How to cook deliciously - Tandoori Chimi Sandwiches
1. Stage
In a medium bowl, mix the Greek yogurt, coriander, cumin, turmeric, paprika, smoked paprika, sugar, cayenne pepper, garam masala, grated ginger, grated garlic, canola oil, the juice of one lemon. Season with kosher salt and pepper. Add the sliced chicken, and marinate for 30 minutes.

Heat a grill pan to medium high heat. Add 1 tsp canola oil, and use a brush to coat the pan evenly.

Wait until the pan smokes, then add marinated chicken (two slices at a time ) and cook, without touching, for five minutes. Lower heat to medium. Flip, then cook for another four minutes (or until you see grill marks).

While the chicken cooks, in a medium bowl, mix the shredded cabbage, red onion, shredded carrot, chopped parsley and chopped cilantro. Add 1 tsp vinegar, and salt and pepper to taste.

Heat broil to low. Spread butter evenly on the bread, and broil for two minutes.

Layer sauce on both sides of bread, then add the grilled chicken. Top with the slaw and a layer of thinly sliced tomatoes.
