Ingredients for - Scrambled Tofu

1. Olive oil - 1 tablespoon
2. Green onions, chopped - 1 bunch
3. Peeled and diced tomatoes with juice - 1 (14.5 ounce) can
4. Firm silken tofu, drained and mashed - 1 (12 ounce) package
5. Ground turmeric to taste - 1 (12 ounce) package
6. Salt and pepper to taste - 1 (12 ounce) package
7. Shredded Cheddar cheese (Optional) - ½ cup

How to cook deliciously - Scrambled Tofu

1. Stage

Heat olive oil in a medium skillet over medium heat, and saute green onions until tender. Stir in tomatoes with juice and mashed tofu. Season with salt, pepper, and turmeric. Reduce heat, and simmer until heated through. Sprinkle with Cheddar cheese to serve.
