1. 8 medium Yukon gold potatoes, chopped into 1" cubes -
2. Kosher salt -
3. 1 1/4 c. sour cream -
4. 1/4 c. mayonnaise -
5. 1 tsp. onion powder -
6. 1/4 c. finely chopped green onions, plus more for garnish -
7. Freshly ground black pepper -
8. Sour cream and onion potato chips, crumbled (optional) -

How to cook deliciously - Sour Cream 'n Onion Potato Salad

1. Stage

In a large pot, cover potatoes with water and season generously with salt. Bring water to a boil and cook until potatoes are easily pierced with a knife,12 to 15 minutes. Drain and let cool slightly.

2. Stage

In a large bowl, combine sour cream, mayonnaise and onion powder. Fold in potatoes and green onions. Cover with plastic wrap and refrigerate for at least an hour. Season with salt and pepper, then garnish with more green onions. Top with crumbled chips, if desired.
