How to cook deliciously - Stracciatella Gelato
1. Stage
In a large saucepan, bring milk, sugar, cream and salt to a low simmer until sugar has dissolved, three to four minutes, stirring constantly. Remove from heat; let cool. Transfer to a bowl and refrigerate, covered, until cold, about one hour.
2. Stage
Fill cylinder of ice cream maker no more than two-thirds full; freeze according to manufacturer’s directions. When gelato has thickened, about halfway through churning, stir in chopped chocolate.
3. Stage
Transfer the gelato to a freezer container, allowing headspace for expansion. Freeze until firm, three to four hours.
