How to cook deliciously - Sushi Rice

1. Stage

Place rice in a fine-mesh strainer and rinse under cold water until water runs clear. In a large pot over medium heat, combine rice and water. Place konbu (if using) on top. Bring to a boil, then reduce heat to medium and simmer, covered, until rice is tender, about 15 minutes. Remove from heat. Leave lid on to let rice steam 10 minutes more.

2. Stage

Meanwhile, in a small pot over medium heat, cook vinegar, sugar, and salt and stir, stirring occasionally, until sugar and salt are dissolved. Remove from heat.

3. Stage

Discard konbu and fluff rice gently with a fork. Transfer rice to a glass 13" x 9" baking dish. Drizzle vinegar mixture over rice by slowly pouring it over a sushi paddle or flat wooden spoon while moving the spoon back and forth over rice, then cut and fold rice over itself, trying not to smash or break any grains and fanning rice occasionally to help cool it down. Rice should be lukewarm.

4. Stage

Cover with a damp paper towel until ready to serve.
