1. Stage
In a medium bowl, whisk flour, baking powder, granulated sugar, and salt. In a small bowl, whisk egg and milk. Pour egg mixture into dry ingredients and mix until dough comes together.

On a lightly floured surface, knead until a smooth ball forms, 2 to 3 minutes.

Divide dough into 4 pieces. Roll each piece into 2.4-oz. balls. Using a rolling pin, flatten each ball until 4" in diameter and 1/8" thick.

In a medium pot fitted with a deep-fry thermometer, heat oil until thermometer registers 325° to 350°.

Meanwhile, in a small bowl, whip butter and honey until fluffy, about 1 minute.

Working in batches, fry dough until golden brown and puffy, 1 to 2 minutes per side. Transfer to a paper towel-lined plate and let cool slightly.

Transfer scones to a platter. Dust with confectioners’ sugar. Serve with honey butter alongside.
