Ingredients for - Avocado-Caviar Mousse

1. 2 ripe Hass avocados -
2. 4 oz. fresh goat cheese -
3. 2 tbsp. heavy cream or whole milk -
4. 1/2 tsp. finely grated lemon zest -
5. 1 tbsp. fresh lemon juice -
6. 3 tbsp. sturgeon-style caviar -
7. 2 tbsp. snipped chives -
8. Salt and freshly ground pepper -

How to cook deliciously - Avocado-Caviar Mousse

1. Stage

In a food processor, puree the avocados with the goat cheese, cream, lemon zest and lemon juice. Transfer to a bowl. Fold in the caviar and chives and season with salt and pepper.

2. Stage

Make Ahead: Cover the mousse directly with plastic wrap and refrigerate for up to 2 hours. Let stand at room temperature for 15 minutes before serving.

Serve With: Brioche toasts, grissini, pita crisps, steamed shrimp or sliced raw vegetables, such as celery, endive and cucumbers.
