3. 2 c. diced strawberries -
4. 1/2 c. sugar -
5. 9 graham crackers (1 sleeve) -
6. 1/2 stick butter, melted -
7. 1/4 c. sugar -
8. 1/4 tsp. ground cinnamon -
9. 1/4 tsp. kosher salt -
10. 16 oz. cream cheese, room temperature -
11. 2 large eggs -
12. Juice and zest of 1 lemon -
13. 1/2 c. sugar -
14. 1/2 c. blueberries -

How to cook deliciously - Berry Cheesecake Bars

Preheat oven to 325°.

Make Strawberry Compote: Whisk together cornstarch and water. In a small saucepan over medium heat, combine strawberries with sugar. Stir often, until juices have been released. Bring to simmer, add cornstarch slurry and cook for about 3 minutes more. Set aside and cool.

Make Graham Cracker Crust: Place graham crackers in a food processor and pulse until you have fine crumbs. (Or crush the crackers in a Ziploc bag with a rolling pin or your hands.) Add butter, sugar, cinnamon, and salt. Process (or stir) until combined. (Texture should be similar to wet sand.) Pour the mixture into a 9"-x-9" baking pan and gently press to evenly distribute crust. Bake until golden, about 10 minutes, then cool slightly.

Make Cheesecake: With a hand mixer, mix cream cheese, eggs, lemon juice and zest, and sugar until evenly combined, then pour over graham cracker crust. Swirl the strawberry compote on top of the cheesecake with a butter knife or toothpick. Bake until mostly firm (the center will slightly jiggle), about 35 minutes. Top with blueberries. Let cool completely then refrigerate until set, about 3 hours.
