1. 32 oz. beet juice (juiced from fresh, organic large red beets) -
2. 6 oz. sliced raw red beet -
3. 3 oz. fresh orange juice -
4. 1 oz. fresh lemon juice -
5. 1/2 tsp. salt -
6. 1/2 c. sugar -

How to cook deliciously - Betterave (Beet Sorbet)

1. Stage

In a saucepan, combine beet juice, sugar, and raw beet slices. Cook and reduce by half. Skim as necessary. Transfer mixture to a blender, and process on high for 3 minutes, until consistency is silky and smooth. Add salt, orange juice, and lemon juice, then pass the liquid through a fine sieve. Cool the mixture down and process in an ice cream maker according the manufacturer's instructions.
